Low calorie and vegetarian recipes are an often synonymous terms, which is one reason why vegetarians and vegans typically don’t suffer from the obesity epidemic that plagues the rest of society. Many obese people often say that they’ve “tried every diet,” but what this usually means is that they’ve tried every “diet fad” and not the one way of eating that fosters thin bodies. My grandparents had died at young ages of heart disease, and at 28 years old I was well on my way to the same fate. Since then my weight has been about 170-180 pounds, my cholesterol is less than half, my blood pressure is on the low side of normal and I no longer suffer from gout.
When we give up meat, it’s hard NOT to lose weight. The low calorie and vegetarian recipes, many of which are a snap to prepare, automatically replace the high calorie meat-based recipes. Amazingly, these low calorie and vegetarian recipes are typically packed with nutrients that the meat-based recipes lack. The need to eat meat and dairy for nutrients, as most of us are taught in schools, is a myth, and not surprisingly most of those “teaching materials” were supplied by the meat and dairy industries. The truth is vegetarian and vegan diets provide far more nutrition, far more variety and far more taste, with a whole lot less calories.
But low calorie and vegetarian recipes have many more benefits than just the eradication of obesity. Meals prepared according to these principles also are typically very low in fat. Heart disease kills more Americans than all other diseases combined. Sadly, it is such a prevalent disease in our society that it now considered to be a normal part of the aging process. But there is nothing normal about it. Just try to find a long-time vegetarian or vegan that has heart disease. It is virtually nonexistent!
The health benefits of low fat and vegetarian recipes don’t stop there. There are now decades-long studies directly linking protein from meat and dairy sources to many cancers. These studies also show that protein from plant sources “turn off” cancer.
